Skillet peach cobbler

Ingredients

  • 5 cups sliced peaches or mixed stone fruit
  • 1/3 cup sugar, 1 tablespoon lemon, pinch salt
  • 1 cup flour, 1 tablespoon baking powder, 3 tablespoons sugar
  • 1/3 cup cold vegan butter, 1/2 cup oat milk

Method

  1. 1Heat oven to 375°F. Toss fruit with sugar, lemon, and salt in a skillet.
  2. 2Rub butter into flour, baking powder, and sugar. Stir in oat milk to a shaggy dough. Drop over the fruit.
  3. 3Bake 30–35 minutes until the top is gold and the fruit bubbles. Eat warm. Drive to Pagedale when you want theirs.
