Cashew mushroom melt

Ingredients

  • 1 cup raw cashews, soaked 20 minutes in hot water
  • 2 tablespoons nutritional yeast
  • 1 lemon, juice
  • 1 garlic clove
  • 8 oz mushrooms, sliced
  • 1 yellow onion, sliced
  • 4 slices sourdough
  • Olive oil, salt, black pepper

Method

  1. 1Blend drained cashews with yeast, lemon, garlic, a pinch of salt, and a splash of water until pourable.
  2. 2Cook onions in oil over medium heat until deep gold, 12 minutes. Add mushrooms and a pinch of salt; cook until they give up their water.
  3. 3Toast sourdough. Spread cashew sauce, pile mushrooms and onions, close the sandwich, and crisp both sides in the pan.
